Sprouting on potatoes is completely natural, its usually triggered by changes in temperature. Sprouting potatoes are still okay to eat, just snap off the sprout and your potato is ready to go.

In the fridge or a cool and dark place! Storing your potatoes  in the fridge can make them last upto 3 weeks longer.

You can freeze cooked potatoes. Par-boiled roasties or ready-made mash are ideal for freezing, so that you can reduce waste while saving prep time later. Raw fresh potatoes don’t freeze well though.

Greening is a potato’s natural reaction to being exposed to light, leading to chlorophyll development in those areas. Sometimes this happens if a potato grows too close to the surface, but we would usually grade these out. We use opaque packaging to limit light exposure while potatoes are in the store and we recommend that potatoes are kept in a cool dark place after purchase. Green potatoes shouldn’t be eaten, but if there is a little bit of green you can just cut it off and enjoy the rest.

Fresh potatoes are 99.9% fat free and provide lots of essential vitamins, minerals, and fibre.
