Cod & Pea Croquettes

Ingredients

  • 300g Nanna Tate potatoes
  • 2 cod fillets
  • 50g frozen peas, cooked & cooled
  • 10g butter
  • 1 egg
  • 1 egg yolk
  • 40g golden breadcrumbs
  • 20g plain flour
  • 5 tbsp vegetable oil
  • Salt & pepper

    Prep the Cod

    Cook cod as per back of pack instructions, shred into thin pieces then chill for an hour.

    make your mash

    Peel potatoes then chop into even-sized pieces and place into a pan of cold water. Bring to the boil then simmer for 16-18 minutes until soft. Mash the potatoes then add butter, egg yolk, salt & pepper and mix well to form a firm mash. Chill for 1 hour.

    Mix the filling

    Crush the peas and mix with the chilled cod.

    Create & coat croquettes

    Divide potato mix into golf-ball sized pieces and gently push a small divot down the centre of each piece. Put a spoonful of the fish mix into the middle and shape the potato mix around until you can roll the croquette between both hands. Shape into balls, or the classic croquette shape, then chill for 30 minutes.

    Beat the egg in a bowl then place flour and breadcrumbs onto separate plates. Roll each croquette in flour, then coat in the beaten egg, then roll in the breadcrumbs until evenly coated. Place onto a parchment lined baking sheet and chill for an hour to firm up.

    Heat the vegetable oil in a heavy based pan on a high heat and fry the croquettes, turning frequently, until they are golden brown all over.

    Serve with a green salad, wedge of lemon and your favourite sauce.
