POTATO SCONES

Ingredients

  • 250g plain flour, plus a little extra for dusting
  • 50g caster sugar
  • 2 tsp baking powder
  • 100g butter, soft at room temperature
  • 1 egg, beaten
  • 38ml milk
  • 100g Nanna Tate Super Scrumptious Mash

 

Let’s get cooking!

    MIX YOUR DOUGH

    Preheat oven to 180oC / Fan 160oC / Gas 4.

     Add the flour, baking powder and sugar to a mixing bowl. To this, add the soft butter and mix gently with the tips of your fingers until it resembles breadcrumbs. Next, add in the egg and milk and continue mixing until the scone mix becomes smooth, then stir in the mashed potato.

    GENTLY SHAPE

    Transfer to a floured work surface and knead for 1 minute. Dust with a little more flour and roll out to about 3cm thick.  Cut out your scones from the dough.

    BAKE YOUR SCONES

    Place onto a baking tray with greaseproof paper and cook for 20 minutes until golden.

    Delicious served while still warm with jam and clotted cream – jam first or cream first, it’s up to you!
