Ingredients
- 600g Nanna Tate Baby Potatoes
- 100g spring onions, trimmed and cut into pieces
- 10g fresh coriander leaves
- Olive oil
- Sea salt & black pepper
For the DRESSING
- Juice of 1 lime
- 30g honey
- 30g sriracha chilli sauce
- 10g soy sauce
- 2 garlic cloves, peeled and minced
- 10g ginger puree

MIX THE DRESSING
Mix all the ingredients for the dressing together in a bowl. If you haven’t got sriracha chilli sauce, use 1 tsp of chilli flakes and 1 tbsp of ketchup.

AIR FRY & GLAZE
Place the potatoes in the air fryer basket. Drizzle olive oil, sea salt and black pepper over the potatoes and air fry for 15 minutes at 180oC.
Add ¾ of the dressing and the spring onions and shake the basket to coat. Air fry for another 10 minutes to glaze the potatoes. Depending on the size of your air fryer you may need to cook in batches as you don’t want the basket too overcrowded.

FINISH & SERVE
Empty the glazed cooked potatoes into a large bowl, add the remaining dressing and stir. Serve on a large plate, sprinkled with coriander leaves.
Great served as part of a BBQ spread.
