Ingredients
- A pack of Nanna Tate Super Scrumptious Mash
- 1 egg, lightly beaten
- 250g plain flour, plus a little extra for dusting
- 200g halloumi, cut into finger sized pieces
- 30g fresh basil
- 50g hot honey
- 2 tbsp olive oil
- 1 tbsp butter

warm your mash
Part-cook the Nanna Tate Super Scrumptious Mash for 3 minutes in the microwave to heat and soften.

mix & shape
Combine the part-cooked mash, flour and egg in a large bowl. Mix well to form a large dough-like ball.
Pull the dough into four sections then roll out each one into a thick rope. You want them to be around one inch or so in diameter. Add extra flour as needed to stop them sticking.
Use a sharp knife to cut the ropes into 1 inch long gnocchi pieces. They should look like little pillows. If you have time pop them into the freezer to firm for 15 minutes.

cook & serve
Over a medium heat, add the olive oil and butter to a large frying pan. Place the gnocchi into the pan and fry for around 5 minutes. Once coloured, flip over and cook the other side for another 5 minutes or until golden brown.
Whilst the gnocchi is cooking, in another frying add a splash of olive oil and heat on medium. Add the halloumi pieces and fry for 2-3 minutes on each side to add some colour and soften.
Now add the fried halloumi, basil and hot honey to the gnocchi pan to wilt the basil and gently mix for a couple of minutes.
Perfect served as part of a BBQ spread, or with grilled meats and salad.
