Step 1 of 2
MAKE YOUR POTATO SOUP
Melt the butter in a heavy saucepan. When it foams, add the potatoes and onions and toss them in the butter until well coated. Sprinkle with salt and a few grinds of pepper. Cover with a lid and cook on a gentle heat for approximately 10 minutes.
Meanwhile, bring the stock to the boil. Then add it to the onions and potatoes and continue to cook for about 10–15 minutes or until the vegetables are soft. Add the milk and Dijon mustard and transfer the soup to a blender or food processor. Blend until smooth, taste and add more salt and pepper if needed. Serve sprinkled with a few freshly chopped herbs.

Step 2 of 2
MAKE YOUR FRENCH ONION SOUP
Preheat oven to 200°C / Fan 180°C / Gas 6.
Toss the potatoes with oil, salt and pepper and roast for 30-40 minutes, until tender.
Meanwhile, melt the butter in a sauté pan over medium heat. Cook the onions gently for 25-30 minutes, until golden brown. Deglaze with wine, stir in thyme and cook 2-3 min until reduced.
Slice off the top third of the potatoes lengthways. Scoop out the insides and mash the flesh with sour cream and half the Gruyère. Mix in the caramelized onions. Taste and season. Spoon the filling into the potato shells. Top with remaining Gruyère. Bake for 10-15 minutes until cheese is melted. Garnish with parsley.
Serve your bites on the side of the soup to dip.
