TATER HASH

Ingredients

  • 450g leftover roast potatoes
  • 300g leftover cooked vegetables, (carrots, cabbage, sprouts, etc)
  • 130g pancetta, diced
  • 200g leftover stuffing
  • 2 tbsp garlic paste
  • 10g fresh sage, finely chopped
  • 2 tbsp olive oil
  • Salt and pepper

Let’s get cooking!

  • Step 1 of 2

    CHOP & FRY

Chop up all the vegetables into small bitesize pieces. Add the olive oil to a large frying pan and heat on medium heat, add the pancetta and fry for 2 minutes. Add the vegetables and stuffing to the pan and cook for 10 minutes. Don’t turn – you want to build some colour and crust.

Add the garlic paste, sage and salt and pepper, mix and turn the veg and cook for a further 10 minutes. If you hear lots of sizzle reduce heat slightly, you don’t want to burn but do want a nice golden colour.

MAKE IT YOUR OWN & SERVE UP

Spoon onto plates and serve with whatever brunch bits you have. This is great served with poached eggs and chilli crunch.
