MEGA WEDGES WITH SIGNATURE SUMMER SAUCE

Ingredients

For the wedges

  • 4 large Nanna Tate potatoes
  •  2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 lime, cut into quarters
  • 1 lemon, cut into quarters
Signature summer sauce
  • 300g strawberries
  • 75g balsamic vinegar
  • 35g honey
  • ½ tsp of chilli flakes
  • Salt & pepper
  • 1 lime, juice and zest
  • 150g mayonnaise

    wedge & par cook

    For the wedges, cut potatoes longways into quarters and place in a saucepan with cold water. Bring to the boil and cook for 10 mins. Drain, then tumble potatoes in oil, herbs and spices.

    make your sauce

    While the wedges are cooking, make your sauce by combining all the ingredients except the mayonnaise in a saucepan and cook on a low to medium heat for 15 minutes or until the strawberries turn pulpy, stir several times to stop sticking. Transfer to a bowl and leave to cool.

    Once cool mix in the mayonnaise until the sauce is pink and consistency of thick cream.

    cook & finish

    The potatoes can be cooked directly on the BBQ or in a griddle pan on the hob. You’re looking for BBQ grill marks and some even colour. Depending on the temperature control, the wedges will take about 10-15 minutes to cook. Half way through add the lemon and lime wedges to the grill. Turn the potatoes once during cooking, don’t keep poking or moving.

    Once cooked squeeze over the charred lemon and lime and drizzle with the signature summer sauce. Great as part of any BBQ or summer get together.
