BABY POTATO BBQ SKEWERS

Ingredients

  • 750g Nanna Tate Baby potatoes
  • 1 red onion, diced
  • 1 yellow pepper, diced
  • 2 courgettes, cut into rounds
  • 500g cherry tomatoes
  • 500g button mushrooms
For the marinade
  • 2 tbsp honey (or use Agave nectar for Vegans)
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tsp garlic purée
  • 1 tsp ginger purée

    COOK YOUR TATES

    Wash the Baby potatoes (no need to peel). Add to a pan of salted water and simmer for 15 – 20 minutes, until tender. Drain and allow to cool. Add your prepared veg and mix gently.

    MARINATE & SKEWER

    Mix all the marinade ingredients together and pour half the marinade over the potatoes and veg. Stir gently so that everything is well coated then gently load up all the pieces artfully onto skewers.

    BBQ

    Cook on the BBQ for 10 minutes, turning regularly and glazing with remaining marinade until charred and cooked through. Serve as a deliciously healthy BBQ side.
