BBQ Jackfruit Jackets

Ingredients

• 4 large Nanna Tate potatoes
• 2 cans of jackfruit in brine or water
• 1 tsp garlic powder
• 1 tsp chilli powder
• 1 tbsp paprika
• 1 tbsp brown sugar
• 1 tbsp vegetable oil
• 280g BBQ sauce
• Vegan cheese, grated

    bake your tates

    Preheat oven to 180oC / Fan 160oC / Gas 4.

    Prick potatoes a few times with a fork and place in the oven to bake for around 60-80 minutes, or until tender and cooked through.

    Make your BBQ jackfruit

    Drain and rinse your jackfruit and place in bowl. Lightly shred using two forks. Mix in your seasonings and toss to fully coat. Place oil in a pan and put on a medium heat. Add the jackfruit and cook for about 5 minutes to heat through. Add the BBQ sauce and mix in well, breaking up the jackfruit further with the back of a spoon while cooking.

    Load ’em up

    Cut each jacket potato in half then cut a cross in each half and fluff up the potato inside. Add vegan cheese and BBQ jackfruit, then top with more vegan cheese and pop back in the oven for 5 – 10 minutes.
