Potato waffles

Ingredients

For the potatoes

  • 400g Yummy Cheesy Mash Bake
  • 4 spring onions, finely sliced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 4 eggs
  • 1 avocado, peeled and sliced
  • Optional, chilli oil to serve

Let’s get cooking!

    Warm up

    Warm up the cheddar mash in the microwave for about 2.5 mins to soften it up. In a large bowl combine the warm mash with some seasoning and chopped spring onions.

    Shape ’em

    Shape the mixture into 2 large balls and put into the waffle iron, heat for 10 minutes or until golden brown. Poach the eggs as you usually would.

  • Step 3 of 3

    Serve up

    Top the waffles with the sliced avocado, 2 poached eggs per serving and a drizzle of chilli oil to taste.
